The final bidding for this item will take place at our Live Auction Dinner on Saturday 6 November at The Wyvern, Kingswood College, Grahamstown. Like a Phoenix rising from the ashes of a failed social experiment, Makhanda Phoenix Gin rises, representing the potential of the New Africa, where we embrace our collective roots, and grow to be strong again.
Bees, the common representatives of our ancestors in African, European and Indian cultures, produce the honey and yeast that enable the fermentation of the base of this gin. The yeasts are derived from the ancient Xhosa beverage tradition of iQhilika - one of Africa’s greatest meads (honey-wines). African bush honey, molasses and a little sugar are fermented using iQhilika yeast and carefully distilled to capture the essence of these South African starting materials.
The spirit obtained is carefully collected, with the first glass, containing the "heads" being given back to the Earth and ancestors as is customary in all distilling cultures. The captured essence in the spirits is then redistilled with a special blend of herbs - grown in the Eastern Cape - and spices. The spice mix is a traditional breyani mix handed down over many generations to the current custodian, Serelda Caiger.
This produces a unique gin that brings all of us in Makhanda together so that we may rise as a united community, proud of our ancestors, and our future.
